Cranberry Nut Squares
- 1 ½ C Flour
- 1 t. Baking Powder
- 1 ½ C Sugar
- 2 Sticks of Butter ( Margarine)
- 2-3 C Fresh Cranberries
- 2 Eggs Beaten
- 1 C Chopped Walnuts
- 1/8 t. Salt
- 1 t. Vanilla
Cream butter/margarine, add eggs, vanilla, and dry ingredients. Add cranberries
and nuts. Bake at 325’ in a greased 9”x 14” pan for 50 minutes or until done.

Ruby Chicken
- 1 2 ½ -3 lb. broiler/fryer chicken, cut up (or use chicken breasts)
- ½ C all-purpose flour
- 1 t. Salt
- 4 T butter or margarine
- 1 ½ C fresh cranberries
- ¾ C chopped onion
- 1 t. grated orange peel
- 3/4/ C orange juice
- ¼ t. ground cinnamon
- ¼ t. ground ginger
Coat chicken pieces with a mixture of the flour and salt. Brown in melted butter
in a skillet, turning once. Meanwhile, combine remaining ingredients in saucepan;
bring to boiling. Pour over chicken. Cover and cook slowly 35 to 40 minutes or till
chicken is tender. Makes 4 servings ( Better Homes and Gardens)

Cranberry Pie
- 2 C cranberries
- ½ C sugar
- ½ C walnuts
- Place berries in the bottom of a greased 10 inch round (or similar) baking dish…sprinkle
sugar over berries and drop nuts into dish
- Mix together and pour over berries:
- 2 eggs beaten
- 1 C. sugar
- 1 C reg. flour
- ½ C melted butter or margarine
- ¼ C liquid shortening (oil)
- bake at 325’ for 60 minutes or until crust turns golden brown….
Serve warm with vanilla ice cream….tastes fabulous and it’s quick!!!
